recipe: blue cheese dip

Blue cheese is truly a unique food! Injected with penecillin and stuffed somewhere where the sun doesn’t shine for a looong time, blue cheese is not for everyone! But, love or hate it, its creamy tanginess pairs well with spicy eats like chicken wings, or simply with some vegetable crudites. In this recipe I’ve used what is, in my humble opinion, the best darn blue cheese ever – Stilton! Stilton is like a cross between blue cheese and cheddar, turning down the tang and turning up the creamy! It is truly the blue cheese for blue cheese haters such as myself. Head down to your local cheese factory and try it out!

1/4 c crumbled Stilton blue cheese

1/4 c mayo

1/4 c sour cream

2 tbsp apple cider vinegar

1 pinch cayenne

1 tsp white sugar

1/2 tsp grainy mustard

1 tbsp oil (try safflower or olive)

1. Combine all ingredients together, ensuring the blue cheese is well-distributed throughout the sauce. Use a food processor if necessary. For best results, let sit overnight before using, but can be eaten right away. Serve with veggie crudites or hot wings, or pretty much anything spicy.
