recipe: broccoli & cheddar quinoa

 

Quinoa’s sure been gaining popularity in the last few years, especially with the health nuts. Touted a grain but actually a seed, is indeed a low-carb, high-protein seed that is cooked and treated like a grain, making it an excellent option as a side dish or on its own! Here we combine the classic comforting flavors of broccoli and cheddar to make a nutritious, filling, and satisfying bowl of health food in the guise of comfort food. Bon appetit!

1 c quinoa, any color

1.5 c chicken stock

1 c broccoli florets

1 c shredded cheddar cheese

salt and pepper, to taste

1. Rinse the quinoa in a fine mesh colander under cold water; this will remove the toxic, bitter coating that naturally occurs on quinoa (or buy the pre-rinsed stuff). Place into a large saucepot with the chicken stock and cook, covered, over medium heat, about 10 minutes. Add the broccoli florets and cook another 5-10 minutes or until stock has been absorbed and quinoa is soft and fluffy.

2. Remove from heat, stir in the cheese, and season to taste with salt and pepper. That’s pretty much it!
