When faced with the dilemma of indecision come dinner-time, why not combine your ideas so you can make them all at once? That’s pretty much what happened here, with this (gluten free!) jalapeno popper pizza! All the flavor of a jalapeno popper in the delectable shape of a pizza! Gluten free or not, you’ll want to give this quick & easy recipe a try.
1 gluten free (or not!) pizza crust
3 tbsp cream cheese
1 c shredded mozzarella (jack would work here, too)
1 fresh jalapeno
3 strips cooked bacon
2 tbsp gluten free (or not!) breadcrumbs
1 tsp garlic confit oil
1. Preheat your oven to 450F and place a cast iron skillet big enough to fit the pizza into the oven to heat. (If you don’t have a cast iron skillet, no worries – just use a sheet pan and don’t bother heating it in the oven).
2. Meanwhile, lob the stem off the jalapeno and, using the handle end of a utensil, dig out the core and seeds and discard. Slice the jalapeno into thin circles. Chop the cooked bacon into small pieces.
3. If necessary, soften the cream cheese in your microwave so it’s easier to spread. Spread evenly over the surface of the pizza crust. Top with the shredded cheese. Sprinkle on the jalapenos and bacon.
4. Combine the garlic confit oil with the breadcrumbs and lastly sprinkle them across the top of the pizza. Carefully slide the zaa onto your hot cast iron skillet and return it to the oven for approximately 15 minutes, until cheese is bubbly and melted, breadcrumbs are golden, and the pizza doesn’t sag in the middle when you try to lift up a corner of it with a utensil.
