recipe: pea and bacon salad

The other day I was hurriedly throwing together dinner, and I needed to come up with a quick vegetable side. Our veggie crisper was looking rather crypt-like so I opted for some peas in the freezer! And what better to accompany a healthy serving of green vegetables than bacon and cheese, right? Enter Pea & Bacon Salad, the best of both worlds – nutritious and delicious!

2 cups frozen peas

4 slabs bacon

3 oz cheddar cheese

1/4 cup mayo

2 tbsp red wine vinegar

1 tsp sugar

1 tbsp olive oil

3 tbsp fine-diced red onion

salt and pepper, to taste

1. Boil the peas in water for about 5 minutes. Drain and run cold water over to cool.

2. Meanwhile, fry up the bacon and chop. Cube the cheese into small squares.

3. When the peas and bacon have cooled, combine with the remaining ingredients. Let sit at least 2 hours to allow flavours to marry, but is even better the next day.
